Essential Sri Lankan Spices Every Kitchen Should Have

Sri Lankan cooking is known for its rich aromas, warming spices and beautifully layered flavours. You do not need an oversized spice collection to begin cooking authentic Sri Lankan meals. A carefully selected group of essential ingredients can help you prepare everything from simple vegetable curries to flavourful rice dishes.

Roasted Curry Powder

Roasted curry powder is one of the most useful ingredients in Sri Lankan cooking. It normally contains a blend of roasted coriander seeds, cumin, fennel, fenugreek and other spices.

Its deep and slightly smoky flavour works especially well in meat curries, lentil dishes and richly seasoned vegetable recipes. Because different brands may vary in strength, begin with a small amount and adjust according to taste.

Unroasted Curry Powder

Unroasted curry powder offers a lighter and fresher flavour than roasted curry powder. It is commonly used for vegetable curries, coconut milk dishes and recipes that require a more delicate spice profile.

Keeping both roasted and unroasted curry powder in your pantry makes it easier to create different styles of Sri Lankan curry.

Ceylon Cinnamon

Ceylon cinnamon has a delicate, fragrant and slightly sweet flavour. It can be added to curries, rice dishes, desserts and warm drinks.

A small piece of cinnamon placed in a simmering curry can add gentle warmth without overpowering the other ingredients.

Turmeric

Turmeric gives many Sri Lankan dishes their familiar golden colour. It also adds a mild earthy flavour and works particularly well in lentils, vegetables, rice and coconut-based curries.

Only a small quantity is usually needed, so add it carefully to avoid overwhelming the dish.

Chilli Powder and Chilli Flakes

Chilli powder provides direct heat, while chilli flakes add both heat and texture. They can be used in curries, sambols, marinades and fried dishes.

Adjust the amount according to your preferred spice level. When cooking for several people, it is often better to begin mildly and provide extra chilli separately.

Mustard Seeds

Mustard seeds are commonly tempered in hot oil at the beginning or end of a recipe. When heated, they release a nutty aroma that complements lentils, pickles, vegetables and coconut-based dishes.

Cover the pan briefly while they pop, then add the remaining ingredients.

Fenugreek Seeds

Fenugreek seeds have a strong and slightly bitter flavour. Used in small quantities, they add depth to fish curry, coconut milk curry and vegetable dishes.

Because fenugreek is powerful, a small pinch is usually enough.

Pandan Leaves and Curry Leaves

Pandan leaves and curry leaves are essential aromatic ingredients in many Sri Lankan recipes. Curry leaves add a savoury citrus-like aroma, while pandan leaves provide a soft, sweet fragrance.

They are often added to rice, curries, lentils and tempered dishes. Fresh leaves are ideal, but frozen or dried versions can also be useful pantry ingredients.
